Swedish Meatball Recipe By Food Blogger @Jennysmatblogg - Printable Meal Planner Included!

Scandinavias biggest food and travel blogger, Jenny Wersén from @Jennysmatblogg, shares her best-loved recipe of a timeless classic with us this week: Swedish Meatballs.
Traditional Swedish Meatballs
Servings: 5-6
Ingredients - meatballs:
1 lb ground beef
1 lb ground pork
1 egg
5 beef stock cubes
salt and pepper to taste
Ingredients - sauce:
1 cup water
1 cup heavy cream
3 beef stock cubes
1 tablespoon dark soy sauce
1 tablespoon lingonberry jam* You can get this at your nearest Ikea or sub it for cranberry jam.
1-2 tablespoons cornstarch
salt and pepper to taste
Instructions:
Mix all ingredients for the meatballs in a bowl. Roll meatballs and fry in a pan with lots of butter on high to medium heat. Once cooked through, place them in another pan while youre making the sauce.
Pour water into the pan where you fried the meatballs, whisking up all the wonderful flavours. Bring to a gentle boil, then strain it. Pour in heavy cream, stock cubes and lingonberry jam. Thicken the sauce with cornstarch until reaching desired consistency. Add salt and peppar to taste. Add meatballs and let everything simmer for a few minutes.
Serve with crispy snow peas, boiled potatoes and lingonberry jam. Enjoy!

Jenny, life with four school-aged children can probably get pretty hectic. What time-saving, life-smoothing advice can you give us?
- Prepping is everything! When it comes to food, a great idea is to peel the potatoes the night before or thaw the chicken overnight in the fridge. Another brilliant hack is to cook a big batch of food so you can freeze the leftovers for another family meal in the coming week. Youll save a whole bunch of time this way!
How do you get your kids involved in cooking?
- I think its really important to let the kids help plan family dinners. They enjoy it more this way! In our house, everyone gets to decide what well have for dinner at least once a week.
Lastly, with a new year just begun and probably a few food-related resolutions for some of our readers, what are a few things to think about if one wants to start eating healthier?
- Fruit and vegetables are obviously an important part of our diet, but I believe you can eat everything - in moderation. Having said that, Im pretty strict with sweets during the week, with the exception of birthdays or holidays.
