Swedish Cinnamon Rolls - Recipe


Swedes are known for their cinnamon rolls which are called kanelbullar, literally translated as cinnamon buns. For some reason Swedes like to eat things that are round... Swedish meatballs, Swedish pancakes, Swedish waffles and of course... the Swedish cinnamon roll.

After you’re done, invite some friends over for a Swedish “fika” – coffee and a freshly baked cinnamon roll!

Servings: 40 rolls
All ingredients need to be at room temperature.

INGREDIENTS

Dough
:
3 ½ oz yeast (preferably fresh)

3 ½ oz butter
2
½ cups milk

½ cup sugar

½ tsp salt
4 tsp freshly ground cardamom

6 ¾ cups flour


Filling

:
3.5 oz butter

4 tsp ground cinnamon

½ cup sugar


Brush:


1 whisked egg

½ cup pearl sugar*
*(IKEA might carry this if you have difficulty finding it at your local grocery store)



INSTRUCTIONS

Dough:
1. Crumble the yeast in a mixing bowl.
2. Melt the butter in a saucepan and add the milk to reach a lukewarm temperature. Test using your fingertip.
3. Pour a little bit of the butter/milk mixture over the yeast and stir until dissolved.
4. Add in the rest of the butter/milk mixture, sugar, salt and almost all of the flour.Save some flour for rolling out the dough.
5. Work dough smoothly by hand or in a stand mixer until the dough releases from the edges of the bowl.
6. Allow the dough to rise, covered with a tea towel, for about 30 minutes.

Filling:
7. Add the cinnamon and sugar to the butter and stir into a smooth paste.

To finish:
8. Punch down the dough in the bowl. Place the dough on the workbench and knead it smoothly with the remaining flour.
9. Using a rolling pin, Roll out the dough into a rectangle, about 24x30 inches (for 40 rolls).
10. Spread the filling evenly on the dough.
11. Roll the dough from the long side to form a long roll. Cut the roll into ¾ inch pieces.
12. Place the pieces with the cut surface facing up on a sheet of baking paper or in liners.

13. Allow the rolls to rise under a tea towel for about 20 minutes.
14. 
Brush the rolls with whisked egg and sprinkle with some pearl sugar.
15. Bake the rolls in the middle of the oven at 480°F, for about 8 minutes.

Let the rolls cool down before storing in an airtight container or bag. Works great to freeze these in a freezer bag!
